Ingredients
- 7 oz 99% lean ground turkey (Lean protein)
- 47 g romaine lettuce, chopped (1 Green)
- 37 g cherry tomatoes, sliced (1 Green)
- 30 g minced jicama (1 Green)
- 45 g Napa cabbage, shredded (1 Green)
- 7 black olives, sliced (Healthy Fat)
- 1 oz part-skim mozzarella cheese, shredded (Leaner protein)
- Taco seasoning (1 Condiment):
- 1/4 tsp chili powder
- 1/8 tsp cumin
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1/8 tsp smoked paprika
Instructions
- Cook the Ground Turkey:
- Heat a non-stick skillet over medium heat.
- Add the ground turkey and break it up with a spoon.
- Stir in the taco seasoning and cook until fully browned (internal temp 165°F). Set aside.
- Prepare the Salad Base:
- In a bowl, layer the romaine lettuce, cherry tomatoes, jicama, and Napa cabbage.
- Add Toppings:
- Top the salad base with the cooked turkey, black olives, and shredded mozzarella cheese.
- Serve and Enjoy:
- Optional: Add 1 tbsp of salsa (counts as 1 Condiment) or a drizzle of fresh lime juice (free).
