Turkey Deviled Egg Salad

Ingredients

  • 170 g (6 oz) Leanest Ground Turkey (99% fat-free), cooked
  • 1 large egg white, hard-boiled and sliced
  • 47 g mixed romaine lettuce
  • 52 g cucumber
  • 45 g cherry tomatoes
  • 32 g jicama

Creamy Deviled Dressing

  • 1 tbsp Light Mayonnaise (Hellmann's or similar)
  • 1 cooked egg yolk
  • 1 wedge Laughing Cow Light cheese
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp prepared mustard (yellow or Dijon)
  • Dash of low-sodium chicken broth
  • Splash of water (to desired consistency)
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

Instructions: Shred lettuce and mince other salad veggies. Mix veggies with egg white and shredded turkey. Mash the egg yolk and Laughing Cow wedge together. Slowly whisk in the light mayo, vinegar, mustard, broth, and water until smooth. Season with onion powder, garlic powder, and paprika. Drizzle over the salad!
