Chompies Chipped Beef Supreme
Ingredients
- 5 oz cooked lean steak, thin-sliced
- 40g cooked spinach
- 50g cooked zucchini, diced
- 35g jicama, par-cooked and chopped
- 1 wedge Laughing Cow Light
- 2 tbsp light mayo (look for 3.5g fat or under)
- 1/4 cup unsweetened almond milk (plain, unflavored)
- Optional: 1–2 tbsp low-sodium beef broth
- 1 slice Chompies Whole Grain Bread
- Garlic powder, onion powder, black pepper, paprika, parsley
- Better yet use a heaping tablespoon of our Italian season pre-mix
Instructions
- Lightly spray a non-stick pan and sauté the spinach, zucchini, and jicama until softened. Season with garlic powder, onion powder, paprika, and pepper.
- Lower the heat and stir in the Laughing Cow wedge until melted. Add the light mayo and almond milk slowly while stirring to create a creamy sauce.
- Add optional broth if needed, and a sprinkle of xanthan gum for thickness (if desired).
- Add the sliced steak to the gravy and warm through until fully coated.
- Toast the Chompies bread slice until golden and plate it. Pour the beef and veggie gravy over the toast and serve hot.
