Chicken "Noodle" Soup

Ingredients (1 Serving)

  • 6 oz grilled chicken breast, shredded or diced (1 Leaner)
  • 90 g fresh spinach, chopped (1 ½ Green)
  • 2 cups low-sodium chicken broth
  • 15 g broccoli sprouts (½ Green)
  • 85 g riced cauliflower (1 Green)
  • ¼ tsp onion powder (½ Condiment)
  • ¼ tsp garlic powder (½ Condiment)
  • ½ tsp Italian seasoning (1 Condiment)

Instructions

  1. In a pot, combine the chicken broth, grilled chicken, riced cauliflower, spinach, and broccoli sprouts.
  2. Stir in the onion powder, garlic powder, and Italian seasoning.
  3. Bring the soup to a gentle simmer over medium heat.
  4. Reduce heat to low and let it simmer for at least 30 minutes, allowing the flavors to blend.
  5. Taste and adjust seasoning if needed.
  6. Serve hot and enjoy!
