Chicken Egg Salad
Ingredients:
- 5.5 oz cooked skinless chicken breast, chopped
- 1 egg white, chopped
- 1 slice turkey bacon, cooked and crumbled
- 32 g cooked jicama, diced
- 35 g cooked cabbage, shredded
- 45 g raw tomato, chopped
- 60 g cucumber, sliced
- 2 Tbsp light mayonnaise
Instructions:
- Cook and chop the chicken breast and egg white. Cook and crumble the turkey bacon.
- Combine all chopped proteins in a large bowl.
- Add the diced jicama, cabbage, tomato, and cucumber. Mix well.
- Stir in the light mayonnaise until everything is well coated.
- Serve chilled and enjoy your Lean and Green perfection!
