Ingredients:
- 3 whole eggs
- 1 oz (28g) part-skim mozzarella cheese
- 60g mushrooms
- 55g Napa cabbage
- 45g spinach
- 60g cherry tomatoes
Instructions:
- Heat a non-stick pan over medium heat.
- Dice the mushrooms, Napa cabbage, spinach, and cherry tomatoes.
- Sauté the vegetables in a small amount of water or oil until soft.
- In a bowl, whisk the eggs and pour them over the vegetables in the pan.
- Stir occasionally until the eggs are fully cooked.
- Sprinkle the mozzarella cheese on top and let it melt.
- Serve hot and enjoy!
