Ingredients:

  • 3 whole eggs
  • 1 oz (28g) part-skim mozzarella cheese
  • 60g mushrooms
  • 55g Napa cabbage
  • 45g spinach
  • 60g cherry tomatoes

Instructions:

  1. Heat a non-stick pan over medium heat.
  2. Dice the mushrooms, Napa cabbage, spinach, and cherry tomatoes.
  3. Sauté the vegetables in a small amount of water or oil until soft.
  4. In a bowl, whisk the eggs and pour them over the vegetables in the pan.
  5. Stir occasionally until the eggs are fully cooked.
  6. Sprinkle the mozzarella cheese on top and let it melt.
  7. Serve hot and enjoy!
