Ingredients
Omelet
- 1 whole egg (1 oz lean protein)
- 3 egg whites (2 oz lean protein)

- 1/4 cup cherry tomatoes, diced (1/4 veggie serving)
- 1/8 cup jicama, diced small (1/4 veggie serving)
- Cooking spray or 1 tsp olive oil (healthy fat)
Turkey Sausage Patty
- 4 oz 99% lean ground turkey (4 oz lean protein)
- 1/8 tsp ground sage
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- Dash of smoked paprika
- Salt and pepper to taste
Pancakes
- 1 packet healthy diet-approved Pancake Mix
- Water (as directed on the package)
Low-Carb Syrup
- 1/4 cup water
- 1/4 tsp xanthan gum (for thickening)
- 1 packet stevia (or equivalent liquid drops to taste)
- 1/4 tsp vanilla extract
- Optional: Dash of cinnamon
Instructions
- Prepare the Turkey Sausage Patty: Mix ground turkey with sage, garlic powder, onion powder, smoked paprika, and salt and pepper. Form into a patty and cook in a skillet until browned and cooked through.
- Make the Omelet: Sauté mushrooms, spinach, cherry tomatoes, and jicama. Pour whisked egg mixture into a skillet, add veggies, and fold into an omelet.
- Make the Pancakes: Prepare the healthy diet pancake mix as directed on the package. Cook in a skillet until golden.
- Make the Syrup: Combine water, xanthan gum, and stevia in a saucepan. Heat and stir until thickened. Add vanilla and cinnamon.
- Assemble and Serve: Plate the omelet, turkey sausage patty, and pancakes. Drizzle pancakes with the homemade syrup.
