  • 1 whole egg = 1 oz Lean
  • 3 egg whites ≈ 3 oz Lean
  • 3 oz 98–99% lean ground chicken, cooked = 3 oz Lean

🥬 Green (3 servings)

  • 42g shredded Napa cabbage, sautéed
  • 39g mushrooms, sautéed
  • 45g zucchini, diced (raw or lightly warmed)
  • 32g jicama, finely diced

🧀 Healthy Fat (1)

  • 1 oz part-skim mozzarella, shredded and melted

🧂 Flavor Boosters

  • Garlic powder, onion powder, paprika, black pepper
  • Optional: chili flakes or Bragg’s/soy in the sauté

🔥 Instructions

  1. Sauté ground chicken with seasonings; set aside.
  2. Sauté mushrooms and Napa cabbage. Lightly warm jicama if preferred.
  3. Beat 1 whole egg + 3 egg whites and cook in a sprayed skillet until nearly set.
  4. Add cooked chicken and veggies. Sprinkle mozzarella across the center.
  5. Fold into omelet shape. Let cheese melt. Plate with zucchini on top or side.
